Kale Salad

Kale is one of those beautiful green vegetables that nourishes every part of you. But how to get the dense, fibrous leaves into your body in an enjoyable way?  Try finely chopping the leaves and then the trick is to let your favorite dressing marinate on the chopped leaves for 30 minutes or more.  Use a simple Italian dressing and then add a few of your favorite nuts and even a little dried fruit to get that sweet and savory combination.  Add some chopped avocado on top and this is a filling and satisfying meal.

1 bunch of dinosaur kale, washed and chopped finely
1 handful of raisins or dried berries
2 Tbsp of olive oil
½ of a lemon juiced
1 handful of  favorite nuts (almonds, walnuts, sunflower seeds, etc.)
Salt and pepper to taste
1 tsp of honey

Stir all ingredients together and let sit in the dressing for 30 minutes to 45 minutes.  The marinating process helps to break down the leaves and make it more flavorful and easy to digest.
